Paleo Twix Bars


New year, new you?! Ok, well maybe SOME people want to start making healthier choices.

These homemade Paleo Twix Bars are everything and more! Imagine eating a Twix and not having to feel guilty about it…yeah, you can ACTUALLY do that. Paleo, gluten free, dairy free, vegan…AND STILL DELICIOUS. The shortbread layer, with the gooey caramel layer, and the sweet chocolate layer… so good.

This dessert is super, super easy to make!


At first glance, it looks like a lot is needed, but you actually don’t need much! All 3 layers are composed of a lot of the same repeated ingredients.


The one thing that is going to take the most time is letting the caramel layer fully cool in the fridge. You’re going to need to let the caramel layer sit in there for about 2 hours. We know, that’s kind of annoying, but it’s worth it in the end! Jordan was really excited to try these Twix bars, so she didn’t keep them in the fridge long enough and…. they were a bit messy. SO TAKE OUR ADVICE AND LET THE CARAMEL LAYER SIT FOR AS LONG AS NEEDED. In the end, you’ll have tasty, guilt-free Paleo Twix bars!


Ingredients:


Shortbread layer:


2 cups almond flour


2 tablespoons coconut flour


1/3 cup melted coconut oil


1/3 cup maple syrup


1 teaspoon vanilla


Caramel Layer:


½ cup creamy almond butter


1/3 cup melted coconut oil


1/3 cup maple syrup


1 teaspoon vanilla


¼ teaspoon salt


Chocolate Layer:


¼ cup melted coconut oil


¼ cup cacao powder

2 tablespoons maple syrup


1/8 teaspoon of salt


Directions:


1. Preheat oven to 350 and line an 8x8 pan with parchment paper.


2. In a medium bowl, combine almond flour, coconut flour, coconut oil, maple syrup and vanilla. Mix until well combined. Press into the bottom of the prepared pan and bake for 13-15 minutes, or until the sides are slightly brown. Let cool while preparing the caramel layer.


3. In a medium bowl, combine almond butter, coconut oil, maple syrup, vanilla, and salt. Mix until completely smooth. If needed, microwave in 15 second increments to make mixing easier. Pour over cooled crust and place in the fridge to harden. Refrigerate 1-2 hours. IT TAKES A WHILE TO FULLY HARDEN.


4. Once the caramel mixture is hardened, prepare the chocolate mixture. In a medium bowl, combine the coconut oil, cacao powder, maple syrup, and salt. Mix until smooth and pour over the caramel layer. Refrigerate until hardened- should take about an hour.


5. Once the chocolate is hardened, remove the candy by pulling up on the parchment paper. Place entire square on a cutting board and cut into Twix-sized candy bars.


6. Store in the fridge. Enjoy!
