White Chocolate Maple Butterscotch Bars

Ok honestly, when we made these we were debating which flavors to include and we finally said "ok, we're including them all." #noregrets like absolutely not one regret. We took all of the flavors of fall (butterscotch, maple, cinnamon, pumpkin spice) and added white chocolate because why not...



The recipe calls for 6 cups of cheerios, which is a little less than an entire box. But if you wish to make an entire box worth, then just up the proportions of the butterscotch/marshmallow mixture. 6 cups turned out to be the perfect amount because all cheerios were completely coated... and coated well!



Ok, we've all seen cereal bars with a drizzle of chocolate over them, right? WELL, we took this to another level by pouring a full layer of white chocolate. A FULL LAYER. We don't mess around, guys. And it's a good thing we don't mess around because we must say, the layer of chocolate made these 1,000x better.



We used an 8x8 pan because we wanted thicker bars, but depending on the thickness of the bar you like you can use different size pans. If you like thinner bars, you should use a 9x13! Not like we're judging but....who wants thinner (aka smaller) bars??? These are so good that we promise you will want your mouth packed with all of this fall flavor.



Confession time. Guys - we were soooo excited to dive into these bad boys that we attempted to cut them RIGHT when we took them out of the fridge. Like, we didn't even wait 2 minutes. Yeah, we weren't joking. HOWEVER, do not be as eager as us!! lol. We recommend that you allow the bars to thaw for about 5 minutes. Not too long though or else the chocolate will begin to get soft. Just enough time so that the cutting process will be a little easier. But regardless, it's safe to say we were in fall heaven eating these.



White Chocolate Maple Butterscotch Bars


Ingredients:


Box of Maple-flavored Cheerios


1 1/2 cups butterscotch chips


3 tbsp butter


1/2 cup light corn syrup


1 1/2 cups marshmallows


1/2 tsp pumpkin pie spice


Bag of white chocolate chips


Cinnamon (desired amount)



Directions:


1. In a large, microwavable bowl, add butterscotch chips, butter, light corn syrup, and marshmallows. Microwave 2-3 minutes, stirring every minute until mixed completely. Then, mix in the pumpkin pie spice.


2. Pour Cheerios into butterscotch/marshmallow mixture and stir quickly. Make sure all of the Cheerios are well-coated.


3. Pour coated Cheerios into a 8x8 pan (or other size depending on how thick you want the bars). Make sure Cheerios are packed in tight.


4. Melt white chocolate in microwave. Stir chips about every 30 seconds until all chocolate is melted and smooth.


5. Add cinnamon to the melted white chocolate. We just used our desired amount (we love cinnamon), but feel free to use as much or as little as you'd like.


6. Pour the white chocolate over the top of the bars coating all of the bars evenly. Use a flat spatula or the back of a spoon to even out the chocolate layer.


7. Place pan into the fridge for about 30-40 minutes or until the chocolate on the bars has hardened.


8. When you are ready to enjoy the tasty goodness, take pan out of the fridge and let the bars thaw for about 5 minutes. Cut and serve.
